This is a lighter version of your favourite banana bread. There is no added oil, instead I've substituted plain Greek yogurt. Feel free to take this recipe and make it your own. Keep the walnuts or remove them, add peanut butter chocolate chips instead of plain ones. My kids devour this cake. It never lasts long.

Make this Morning Banana Cake the night before for a great breakfast option. In my house, everyone grabs a piece as they are running out the door. AND with only 200 calories per serving, it is a filling and lower calorie treat to satisfy a sweet tooth.

Morning Banana Cake

Ingredients

  • 3 medium-sized ripe bananas

  • 1/4 cup butter (softened)

  • 2 eggs

  • 3/4 cup granulated sugar

  • 1/2 cup plain yogurt

  • 1 teaspoon vanilla extract

  • 1 1/2 cups all-purpose flour

  • 1/2 cup whole wheat flour

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 1 cup semi-sweet chocolate chips

  • 1 cup walnut pieces 


Instructions

  • Preheat oven to 350 Degrees F. Use cooking spray to prepare a 9 X 13 baking pan 

  • In a medium bowl combine whole wheat and all-purpose flour, baking powder, baking soda and salt. Set aside.

  • In a large bowl or standing mixer, add bananas, butter, sugar and eggs, mix well. Add yogurt, vanilla. Mix again until smooth. 

  • Gradually add dry ingredients to banana mixture. Beat well after each addition. Fold in the chocolate chips and walnuts. 

  • Spoon batter into prepared baking pan. Spread evenly.

  • Bake for 30-35 minutes. Insert a toothpick in the banana cake, if it comes out clean, the cake is done.


*Let the cake cool slightly before serving
