Three Simple Game Day Appetizers

When it comes to appetizers I love them. Honestly, I'd rather have a table full of simple game day appetizers, instead of a three-course meal. I know. Not a great idea.

Appies are grazing food. So, I aim to make my recipes as light as I can. That means oven-baked, instead of deep-fried. I substitute plain yogurt for full-fat sour cream, and I add more veggies to the side plates.

If you are gathering with friends for the big game this weekend, try one or all of these recipes. You won't be disappointed.


 

Greek Dip appetizer
Sheet Pan Greek Dip is so easy

My friend Rachel introduced me to this fabulous new Sheet Pan Greek Dip a couple of months ago. I recently made it for a party and it was a hit. And the BEST part, this is so easy! The base is just two ingredients, and you can top the dip with your favourite fresh veggies and feta cheese.


Sheet Pan Greek Dip

Prep Time:15mins

Servings: 6-8 (shareable)


Ingredients

  • 1 English Cucumber

  • 2 medium Vine Ripened Tomatoes (seeded)

  • 1 medium Red Onion

  • 1 cup of Renee's Gourmet Greek Dressing (355 ml bottle)

  • 1 250 gram package softened Cream Cheese

  • 3/4 cup crumbled feta cheese

  • Pita Chips, Pretzel crisps or Tostitos for dipping


Directions

Step 1

Wash and slice the tomatoes in half. Scoop out the seeds with a spoon. Dice seeded tomatoes. Set aside.

Step 2

Wash and dice cucumber and red onion. Set aside.

Step 3

In a mixing bowl add softened cream cheese and Renee's Gourmet Greek dressing. Blend.

Step 4

Line a sheet pan with aluminum foil. Spread cream cheese mixture on bottom of pan. This will be a thin layer.

Step 5

Add vegetable toppings and crumbled feta.



 

Crispy Oven Baked Salt & Pepper Wings with Homemade Blue Cheese Dip

Prep Time: 15 mins

Cook Time: 30 mins

Servings: 4-6 (shareable)


Salt & Pepper Wings

Ingredients

  • 2.5 pounds or roughly 24 chicken wings (split with wing tips removed)

  • 2 tablespoons Olive Oil

  • 2-3 teaspoons Sea Salt

  • 2 teaspoons black pepper (freshly ground)

  • 1 tablespoon Baking Powder


Directions

*Preheat oven to 425 F degrees

Step 1

Rinse Wings. Pat dry with paper towel. Add to large mixing bowl.

Step 2

Drizzle the wings with olive oil. Toss. Add half the salt and pepper. Toss. Add baking powder. Toss.

Step 3

On a large parchment lined baking sheet, arrange wings in a single layer. Add a little more salt and pepper.

Step 4

Bake in 425F degree oven for 15 mins. Remove. Flip the wings. Add more salt and pepper if desired. Continue baking for 15 mins.



Homemade Blue Cheese Dip

Ingredients

  • 1 cup Blue Cheese

  • 1/2 cup light mayonnaise

  • 1/4 Plain Greek Yogurt

  • 1/2 fresh lemon juiced (about 1 tablespoon)

  • 1 tablespoon white vinegar

  • salt and pepper for taste


Directions

Step 1

Using a fork crumble Blue Cheese in a medium mixing bowl

Step 2

Add Mayo, yogurt, lemon juice, vinegar and salt and pepper. Mix.

Step 3

Serve with veggies


Tip: Make this ahead and let the dip rest in the refrigerator up to a day in advance for great blue cheese flavour.


 

Fresh Tomato and Burrata Pizza Dip

Prep Time: 20 mins

Cook Time: 45 mins

Servings: 6-8 (shareable)

Pizza Dip with toasted garlic bread
Fresh Tomato and Burrata Pizza Dip

Ingredients

  • 2 1/2 cups cherry tomatoes (halved)

  • 1 tablespoon minced garlic

  • 1/4 olive oil

  • 1 tablespoon Italian Seasoning

  • pinch of chili flakes

  • 1 cup marinara sauce

  • 200 ml (7oz) Boursin Cuisine Cream Sauce

  • 1 cup shredded marble cheese

  • 1 250 gram ball of Burrata cheese

  • 12-14 small pepperoni slices

  • fresh basil


Directions

*Preheat oven to 425 F Degrees

Step 1

Remove Burrata from liquid and carefully place the Burrata ball on a clean dish towel to drain extra liquid from exterior.

Step 2

In a large mixing bowl add halved cherry tomatoes, olive oil, Italian seasoning and chili flakes. Mix.

Step 3

Add tomato mixture to an oven safe casserole dish. Bake at 425 F for 20 mins.

Step 4

In a medium mixing bowl add Boursin Cuisine Cream Sauce and 1 cup of shredded cheese. Mix.

Step 5

Once tomatoes are baked. Remove from oven. Add one cup of marinara sauce. Mix.

Step 6

Carefully spoon cream sauce and shredded cheese mixture over the tomato mixture.

Step 7

Add Burrata and break it apart over the cheese and tomato in the casserole dish

Step 8

Top with pepperoni slices

Step 9

Bake for 15 mins in 425F Degree oven


*Top with fresh basil. Serve warm with toasted garlic bread or baguette
