  • 1 teaspoon ground cumin

  • 1/2 teaspoon chili powder

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper


For the Salad

  • 4 cups romaine lettuce, chopped

  • 1 1/2 cups cherry tomatoes, halved

  • 1 cup black beans, rinsed and drained

  • 1 cup corn, rinsed and drained

  • 1/2 lime, juiced

  • 1/3 cup red onion, thinly sliced

  • 1/2 cup shredded cheese (I used a mozzarella cheddar mix)


Avocado Dressing

  • 1 large avocado

  • 1/4 cup olive oil

  • 1/4 cup water (or more for a thinner consistency)

  • 1/4 cup cilantro

  • 1 tablespoon parsley leaves

  • 1 tablespoon red onion

  • 1 1/2 limes, juiced

  • 1 clove garlic, minced

  • Salt and pepper, to taste

Carefully slice the kernels of corn off the cob with a knife. (I find corn on the cob makes this recipe more delicious because of its freshness, but you can also use whole kernel corn from a can or prepared from frozen) Mix the corn and beans and add the juice from half a lime and a pinch of salt. Slice the red onion.
